Flavour Philosophy

We use couvertures which have been meticulously developed to retain the natural flavours of the cacao beans through careful fermentation, roasting and conching. The sugar in our chocolate is raw unrefined cane sugar, and when there is milk it is from organically reared mountain grazing cows who are free to roam in small family groups.

When it comes to adding flavours, we use only the best ingredients possible, which we choose for their provenance and quality rather than their cost and availability. Using processes and ingredients of this quality means our chocolate is smooth and luxurious, without any of the emulsifiers, oils or refined sugars often used in chocolate.

All Ocelot chocolates are made with Original Beans 100% regenerative cacaos: Climate Positive, Delicious & Pure.
