Christmas Rocky Road Recipe

Wave a festive hello to this weekend-enhancing, top-button-unleashing, classic clustering of chocolate, marshmallows and nuts*

* If you are allergic to (or don't like) nuts, just substitute them for broken-up biscuits/cookies

ROCKY ROAD
Makes approx 16 - 20 pieces

INGREDIENTS

200g of your favourite best-quality chocolate (we used dark-milk), broken into pieces.

80g of your favourite nuts (we used Brazil nuts and hazelnuts)

80g mini marshmallows (or regular size cut into smallish pieces, but be warned, they get sticky!)

METHOD

Line a baking sheet.

Cut the nuts into bite-size pieces (e.g: a hazelnut in half, a Brazil into three)

Place the chocolate in a medium-sized heatproof bowl. Melt it - either in a microwave, or with the bowl placed over a pan of gently simmering water. (Stir regularly & don't let it get too hot: as soon as there are only a few small lumps remaining take it off the heat and stir until all melted).

Mix the nuts and marshmallows into the melted chocolate.

Drop heaped teaspoons of mix onto the baking sheet, leaving a little space between each.

Top with some natural-colour sprinkles, if you like.

Put somewhere cool to set (the fridge is okay but a cool room is better).

Enjoy with a hot chai tea, a coffee, broken up and speared into vanilla ice-cream, etc... Tis the season - enjoy, enjoy!
